MEET THE TEAM

  • Phil Helyard

    HEAD CHEF

Phil has over 17 years experience in food and hospitality beginning with his first job at the local bakery when he was just 14 years old, which is where he found his love of food and cooking. Shortly thereafter, Phil began his apprenticeship and has amassed experience across Adelaide’s restaurant scene ever since. For the past 6 1/2 years he has worked closely alongside the owners of Peel St Restaurant, and remains here today as our amazing Head Chef. When he is not at Peel St you will find Phil at Sticky Rice Cooking School, teaching classes and entertaining a crowd.

What is your favourite fresh meal?

Its hard to narrow my favourite meal down to one, but in winter give me a Vietnamese noodle soup loaded with chilli, and in summer nothing beats a charcoal bbq with some banging salads.

    Your go-to delicious knock-off drink?

At knock-off time I'm looking for a beer fast!

    Your simple pleasure in life?

I love heading down the beach with my fiancé and golden retriever and going for a run, I love travelling and tasting fresh local produce as well as entertaining friends and family with a big cook-up.

  • James Michalakos

    RESTAURANT MANAGER

James’ roots in hospitality are a family affair. His first job was working for his uncle’s cafe and having both Greek and Italian-born parents, he further credits his great love of food to his heritage! ‘Tough love’ and his traditional hospitality training is what has blessed James with a great knowledge and passion for service. James has worked for a large range of venues across cafes, pubs, restaurants & catering (as well as in project management), and worked at Peel St Restaurant for two years before taking on the role of Venue Manager that he excels in today!

What is your favourite fresh meal?

My go-to meal is a great steak or bowl of pasta, but I will eat anything and everything put in front of me!

    Your go-to delicious knock-off drink?

Definitely would be a good glass of wine or nice gin.

    Your simple pleasure in life?

In my spare time I love my sports, especially soccer. Played for many years at a high level before succumbing to injuries… but still always watching games live when I can. Music is my other love - I love to play a few instruments when I get the time and have spent way too much on going to live gigs.

  • Brandon Grant

    SOUS CHEF

Working side-by-side with the head chef of Lobethal Road Winery is what sparked Brandon’s interest in cooking and working in kitchens. From Lobethal he was offered a position running the kitchen of Aston Hills at Mount Barker in February of 2021. It was in April of 2021 that Brandon joined the team at Peel St, working his way through the ranks under the tutelage of Head Chef, Phil - leading to his position today as Peel St’s Sous Chef.

What is your favourite fresh meal?

My favourite meal definitely changes with the weather and my moods, but fresh ceviche with lots of citrus and some crispy salmon skin is quite hard to beat.

    Your go-to delicious knock-off drink?

My go-to drink after a long night at work is any dry white we have open! But I wouldn't be true to myself if I didn't give an honourable mention to a cold West End with my dad and friends on my days off.

    Your simple pleasure in life?

I like to spend time cooking for family and friends, working on new ideas in the kitchen and going out to eat at different restaurants for inspiration. I’m a firm believer food is life and I love all the aspects that come with it.
